A TOUR TO DISCOVER A RENOWED ANCIENT GRAIN FARM AND COOK WITH ORGANIC PRODUCTS

This is the most famous farm in Tuscany cultivating ancient grains only and milling the most original flours. And we will bring you there! Not only, we will also teach you how to use the products coming from this farm for a super healthy meal.

VISIT TO THE FARM OF HEALTHY FOOD
In the peaceful countryside of gently rolling hills between Peccioli and Volterra, we will visit together a fully organic farm producing ancient grains and cereals. They grow grains, cereals and legumes that have very ancient origins, preceding the industrialization of farming in the 50s and 60s.
For many reasons that we will explain to you, these products are way much healthier for you than any other commercial flour-based product available in nowadays markets. Even people with gluten intolerance can easily digest pasta, bread and cakes made with these flours.

The farm is certified organic since 1987 and has got a fully integrated system of organic pasta production starting from the grain fields all around, through the flour production in an advanced stone mill, up to a pasta making machinery that creates unique kinds of pasta.
Our expert guide will bring you to visit the production lines of the factory, such as the stone mill, the pasta machine room, the bread baking oven and the drying cells for pasta, with a detailed explanation of all the stages of production from the plant to the packaging.

 

COOKING TIME
We will shop for the best flours, breads, legumes and grains on the property and then… let’s prepare our lunch at our cooking venue.
After the visit, we will drive 20 minutes to reach our cooking location, a culinary school at Rita’s farm. Here you will experience a very interesting hands-on experience and verify with your hands, mouth and nose, how tastier the dishes are if prepared with these special organic products.
Your stomach will be also thankful, because the food prepared with ancient grain products is very healthy and easy to digest.

At the end of the whole experience, the pure joy for your palate: a complete lunch with all the specialties you prepared, served with local wines from Rita’s farm!

All flours used for our special ancient grain cooking class are produced at farm of our visit. Even the bread used for the soups and served at the table is baked by the bakers from the same farm.
The menu will be selected by our chef according your preferences and to the season and availability at the ancient grains shop. The selection includes 3 courses among these:

  • fresh pasta, served with a vegetarian or meat based sauce
  • salad of spelt or farro, dressed with seasonal vegetables
  • legumes and/or grain thin soup, with some other fresh vegetables
  • panzanella bread salad, with tomatoes, cucumber, onion and basil
  • pappa al pomodoro bread thick soup, with tomato sauce, garlic, sage and basil
  • cookies or biscuits with almonds or chocolate

LOCATION OF THE COOKING VENUE:
The premises of the tour take place in the Valdera area, 10 km from Selvatelle and Volterra; 15 km from San Gimignano and 20 km from Montaione

MEET-UP LOCATION:
Unless differently specified, the meeting point with the language assistant is at our office in la Rosa. Detailled instructions will be provided.

DURATION:
This program takes 6 hours: 1 hour for visiting the farm + 3 hours for cooking and the rest for lunch. Time for transportation not included.

AVAILABILITY:
Available all the year through, from Mondays through Saturdays in the morning, followed by lunch, or in the afternoon, followed by dinner.

LANGUAGE:
This class is available in English, German, French, Spanish, Russian or Italian with no surcharge.

The destinations reached during this activity are in the Tuscan countryside, in areas off the beaten track that cannot be reached by public transport. We highly recommend renting a car or a scooter in order to reach them. As an alternative, we can offer a valued service by chauffeured car, van or minibus. Any cost of transportation is to be added to the rates displayed on the rate table of this page.
