The most beautiful Etruscan town
Volterra, what a treasure! A hilltop town with almost 3000 years of history.
Volterra has been used as setting for many historical movies because of its fascinating atmosphere, which brings you back to the Middle Ages or the Renaissance.
Volterra is also the most important town in Tuscany for learning about the Etruscan community, the population that first settled into the Tuscan lands, before the Romans arrived. Our guide will take you in the city center for a guided tour with focus on history and food. You will stop at a local pizzeria to taste the best Italian pizza and the very famous Tuscan cecina, a very simple but really tasty chickpea pie!

A family-run micro brewery in heaven
After lunch we will visit a family-run craft micro-brewery in the rolling hills north of Volterra. The brewery is the last development of a farm that has been producing organic grains in the surrounding fields for generations. Since 2020, the family has invested in an ultra-modern plant for the production of beer with a very low carbon footprint. The energy produced to activate the machines is generated partly by solar panels and partly by olive pits recycled after pressing olives for the extraction of extra virgin olive oil; water is used not only for making up to 80% of the content of the beer bottle but also efficiently applied in the several stages of the beer production, to limit its consumption. Together with the two owners Fernando and Katia we will discover all the steps of beer production, from the initial cereal to the bottle, passing from the processing and cooking of barley malt, through the alcoholic fermentation, up to the refermentation in the bottle. From the brewery you can admire a breath-taking view over the Pisan hills.

Beer tasting and snacks
The guided visit ends in a tasting of various beers accompanied by a platter of local cold cuts and cheeses, all set up in an outdoor pergola in the setting of a splendid Tuscan panorama, in the summer, or in the charming premises of the brasserie, when it’s colder.
